JD’s Amazing Steak Bites

Ingredients

  • 1 lb sirloin or grill steaks, cut into chunks(bites)
  • 2 tbsp JD’s table shake
  • 4 tbsp unsalted butter
  • 1) Cut and trim steak in to bite sized pieces and make sure to trim off the gristle or fat
  • 2) Add the JD’s table shake, and stir
  • 3) Add 2tbsp butter to pan on medium-hi and brown the butter before adding the steak
  • 4) Add steak in 2 batches. Add 1st batch and cook for 30-45 seconds, then remove to and place on a side plate
  • 5) Add the rest of the butter until brown, then add steak, and cook for 30-45 seconds
  • 6) Put 2nd batch on plate, and pour over butter
  • Pan Sauce
  • 1 shallot, minced
  • 1/3 cup Merlot
  • 1/3 cup beef stock
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tbsp unsalted butter
  • 2 tsp dried tarragon
  • Salt and pepper
  • 1) Add shallots, tarragon, salt, pepper and Dijon mustard to the pan
  • 2) Deglaze with red wine, balsamic, and beef stock
  • 3) Add butter and stir for 30 seconds, then pour over steak bites
  • Horseradish Cream Sauce
  • ½ cup heavy cream
  • ½ cup sour cream
  • ½ cup prepared horseradish
  • 2 tbsp fresh chives, chopped
  • 1 tbsp lemon juice
  • 1 tsp Worcestershire sauce
  • Salt & pepper to taste
  • 1) Whisk heavy cream until thickened, but not quite soft peaks
  • 2) Fold in remaining ingredients, and refrigerate for 30-45 minutes
